{Sweet Treats} Cookie Truffles

I love making cookie truffles for parties because they are so easy to create (if you have a little chef at home, s/he can even help you out), can be made in a variety of colors, and are always a hit with our guests (a couple remarked that they tasted like decadent doughnut holes).  After making Oreo truffles for our New Year's party, we were "encouraged" to make them again for our niece's birthday party, and now I'm making a bunch of Vanilla cookie truffles for a Valentine's Day spread.  Check out our step-by-step instructions.  Trust us, these cookie truffles will be a hit at any party! (Just be warned that you'll be asked to make them over and over again!)

Cookie Truffles (makes about 40-50 balls)
Ingredients:
1 20 oz package (roughly 42 cookies) of sandwich cookies (Oreos, Trader Joe's vanilla cookies, etc)
1 8 oz package of cream cheese (we use low fat)
1 20 oz package of almond bark (we use Log House's vanilla flavored one)
food coloring (optional)
chocolate chips (optional)
Directions:
1. Put cookies in a large ziplock bag. Crush cookies into small pieces.
2. Add cream cheese to the bag. Mix the cookies and cream cheese together.
3. Roll mixture into small balls (I use a mini ice cream scoop).
4. Chill the cookie balls for a few hours or overnight.
5. Melt the almond bark (in 30 second intervals in the microwave). Add food coloring (optional).
6. Coat the cookie balls with the melted almond bark.
7. Chill the coated cookie balls. Melt chocolate chips and drizzle on the coated cookie balls (optional)
Serve and enjoy!
