Happy New Year!

Only a few more hours until 2009 is done and we're preparing for an easy New Years Eve at home.

So with some easy small bite ideas and a couple of New York City photos, we're all ready to ring in the New Year!





In addition to baked brie (wrap brie cheese in Pillsbury crescent roll dough and bake in the oven), our other go-to easy but tasty appetizer are blueberries with sweetened cream cheese on crackers.  To make the sweetened cream cheese, we take a bar of cream cheese, coat it in brown sugar, wrap it up in foil, and refrigerate overnight (Make sure you put the package in a Tupperware container as the sugar will melt and run).  The next day, the brown sugar will have melted into the cheese, leaving you with a sweetened spread to make this simple small bite.

Mini cheesecakes make dessert a snap.  Using Oreo cookies as the base, take any cheesecake recipe you have and pour the batter into lined muffin tins.  We added a dollop of nutella and melted chocolate on top (as decoration, and to conceal any cracks!)

Almost anything goes with cocktails - here we used guava juice (because of its pretty pink color) and mixed it with vanilla vodka and agave syrup.  Blueberries were added as garnish.

For larger parties, we also like to keep things simple by having bottles of sparkling wine available with pitchers of different fruit purees/juices.  This way the guests are easily able to serve themselves and enjoy different Bellini cocktails throughout the night.

We can't believe how quickly this year has flown by!  Looking back over the posts, we've realized how lucky we've been to meet some of our idols (including Bobby Flay, Jamie Oliver, and Martha Stewart), eat fabulous meals, and travel to various parts of the country (Philly, DC, Maryland, Midwest, and San Fran) and beyond (Toronto).  But some of our most memorable moments aren't pictured - they're compiled in the lovely comments you make on the site or email to us.

To choose the "Best of 2010", we left the decision to our best judges:  our readers!  So we've compiled our most popular posts (based on page views) below.  Enjoy our look back at 2010!

Barista on 100 Feet Road

In a little nook, Barista is easy to miss as you drive down 100 feet road. A few yards away from Fab Mall, this Barista perhaps offers the quietest and most informal settings I've seen amongst other joints from the popular chain. As you walk in from the street, you step into the open patio covered by a colorful awning. While the Barista does not have a non-smoking section in the patio area, it is spacious enough for you sit comfortably under the breezy umbrellas in the pebbled garden area. In the mornings and evenings, the noisy street can be annoying. At which point you may wish to retreat into the quiet pastel colored interiors, to be greeted by the aroma of freshly ground beans and a vista of dessert delights. Like to be wireless? Bring in your laptop, and take wing - this is a Wi-Fi hot spot. I won't get too much into the menu since it's really the standard and consistent Barista fare (As a side note, if you are a cafe aficionado, you may read that last adjective as characterless. But then, I wont digress here**).

Cost: Rs 60-120 for coffee and a snack
Cleanliness: Average (dusty street nearby and cigarette butts lying around)
Quality: Good
Service: Good
Ambience: Good (Cozy, but can be noisy - crowds or honking traffic)
Bottomline: If you live near Indiranagar and are looking for a cozy nook to grab mocha while you surf the net or play scrabble, you would want to stop by.

{Easy Recipes} Yogurt Biscuits + Chobani giveaway + Dolce Gusto winner announced!


For a quick weekday breakfast, yogurt's my go-to dish-to-go. But I also enjoy how versatile yogurt can be. For a healthier Caesar salad, I use plain Greek yogurt instead of dressing. For baking, much like pumpkin puree or applesauce, yogurt is a great healthy substitute for oil, shortening, or butter.

So when Chobani offered to send us some yogurt and fulfill a giveaway to one lucky HLFD reader, we happily agreed. We love the lemon, mango, and pineapple flavors, but use plain Greek yogurt most often.

I've been fighting a cold now for about a week, so I decided to bake some biscuits to go with the French Onion soup my husband was making for me. I used a recipe found in Mark Bittman's How to Cook Everything (a great resource that every kitchen should have!). I love making biscuits - they're so quick and easy to make. These ones were best served hot with the soup or with jam and hot tea.

Yogurt Biscuits (adapted from Mark Bittman's How to Cook Everything)
Ingredients (makes 10-15 biscuits depending on size)
2 cups all-purpose flour
1 teaspoon salt
3 teaspoons baking powder
1 teaspoon baking soda
5 tablespoons cold butter
1 cup 2% plain yogurt

Directions
1. Preheat oven to 450°F. 
2. Mix dry ingredients together in a bowl and rub butter into mixture to thoroughly blend until it resembles coarse meal. 
3. Stir in yogurt until mixture forms a large ball. 
4. Drop 1-2 tablespoons of dough onto an ungreased baking sheet. 
5. Bake 12-15 minutes until golden brown. Serve within 15 minutes.

Foodbuzz 24, 24, 24: Creole Christmas in Canada


Every year, my girlfriends and I try to get together to catch up over the holidays.  A few years ago we decided to stop buying Christmas gifts for each other and instead spend a nice meal together.  After all, what's better than the gift of time, friendship, and food?


It was easier when we were younger, but now with everyone living in different cities, provinces, states and countries, these annual get-togethers get even more important.  With added significant others, the faces have changed but the dynamic remains the same - lots of laughs, tons of food, and great stories to share.
This year, we headed up to Toronto, Canada for our annual Christmas get-together.  Because we last got together to celebrate our milestone birthdays in New Orleans, LA, we decided to attempt a Creole Christmas this year.
We started with a couple of cocktails because nothing else reminds us of both the holidays and New Orleans!  We made the appropriately-named and festive-colored French Quarter Champinis.  We mixed up 1.5 oz Chambord, 0.5 oz Grand Marnier, 0.5 oz lime juice, 0.5 oz cranberry juice per glass with ice.  After pouring the mix in the glass, we topped it off with about 6 oz of sparkling wine.
Hurricanes were next as we remembered our warm summer's evening enjoying these drinks at Pat O'Briens.  Though we did not have the famous Pat O'Briens hurricane mix, we made a very similar drink.  We mixed together 3 oz rum, 3 oz orange juice, 3 oz pineapple juice, and 0.5 oz grenadine syrup and poured the drinks into tumblers over ice.
Our hostess made these delicious mini vegetarian muffaleta sandwiches as a reminder of our huge vegetarian muffaleta sandwich from Central Grocery:
We laughed when we remembered our initial shock at the size of the original sandwich (and were glad that we opted to share it)  We loved our hostess' version of the sandwich as it was rich in flavor from the olive spread and vegetables.  Its smaller size was also much easier to eat!
On this cold winter's day, the vegetarian gumbo with biscuit topper was a comforting dish.  The hardest part was finding the file powder for the gumbo - which in Toronto is found at Kensington Market (and in New York at Indian spice market Kalustyan's).  Though we had the meaty gumbo at Acme Oyster House, this homemade version was so flavorful and substantial (due to the rice), we didn't really miss the meat.  (And it gave our vegetarian friend a chance to have the gumbo she missed out in New Orleans!)
Our favorite place during the entire trip was Cafe du Monde (as evidenced by our daily trips during our stay).  We all smiled as we remembered our various treks for coffee and beignets - morning, noon, or night.  We found the coffee in the most unusual of places - Chinatown!  In both Toronto and New York, Cafe du Monde coffee can be found in various Chinese stores due to its popularity for Vietnamese Iced Coffee.  We learned that when Vietnamese immigrants went to New Orleans, they loved the chicory coffee so much that they used it for their iced coffees.
We were all so full from the delicious food, dessert was a simple bowl of Pralines n' Cream ice cream topped with Grand Marnier.
We all seemed to have sucre in mind when we made shared our edible gifts.  Bourbon balls covered in festive sugar and sprinkles were rich and reminded us of the truffles we had seen.  The cookies shaped like purses were similar to the fun packaging sucre uses for its chocolates (and the champagne represented our birthday toast at Restaurant August).  And finally, chocolate-covered apples with nuts wrapped in a Fleur de Lils ribbon (New Orleans symbol) to thank our friends for their southern hospitality...all the way up north! 


We all had a wonderful time re-living our New Orleans trip and catching up like old times (while the husbands chatted about that night's big game between Dallas and, coincidentally, New Orleans).  After all, good food and better company is what the holidays are all about!


Recipes:
Mini Vegetarian Muffulettas:
Ingredients:
1 cup giardiniera (pickled cauliflower and carrot salad)
1 cup olives
1 cup marinated mushrooms
6 rolls
1 cup roasted sweet red peppers
1 cup spinach leaves (or arugula)
0.5 lb sliced provolone cheese
0.5 lb sliced part-skim mozzarella cheese
1 cup thinly sliced tomatoes


Directions:
1. In a food processor, chop giardiniera, mushrooms, artichoke hearts, and olives along with liquid from the jars.
2. Hollow out tops and bottoms of rolls, leaving 3/4 inch shells (discard bread or save for future use)
3. Spread veggie mixture over tops and bottoms of rolls
4. Layer provolone cheese, roasted red peppers, tomatoes, mozzarella cheese, and spinach.
5. Replace tops.
6. Wrap tightly in plastic wrap, secure with toothpicks.
7. Refrigerate overnight.


Vegetarian Gumbo
Ingredients:
1/2 cup vegetable oil
1/4 cup toasted sesame oil
3/4 cup flour
1 large onion, chopped
1 bunch green onions, chopped
1 green bell pepper, chopped
1 red bell pepper, chopped
6 ribs celery with leaves, chopped
2 tsp thyme
3 cloves garlic, minced
6 cups vegetable broth
3 cans (15 oz) diced tomatoes
1/2 bunch parsley, finely chopped
2 bay leaves
2 Tbsp Tamari soy sauce
1 tsp hot sauce (add more for extra kick!)
1 tsp paprika
salt to taste
8 cups cooked rice
file powder to taste

Directions:
1. Heat oil over low heat in a big soup pot or Dutch oven.  When it's hot, add flour.  Cook over low heat for about 10-15 minutes until the color is similar to a coppery penny.
2. Add onion, peppers, celery, thyme, and garlic.  Cook over low heat for about 30-45 mins.  Stir frequently - add oil only if necessary.
3. Add stock, tomatoes, parsley, bay leaves, tamari, hot sauce, paprika, and salt.
4. Let it come to a boil, then turn down and let simmer 2-3 hours.  The key to this recipe is low heat and almost constant stirring for 45 minutes.  After an hour or so, taste and add more salt or cayenne.
5. Serve in cups and top with file powder and biscuit.

Lemon Sugar Cookies: Sharing the Spirit of Giving with 10 Days 'Til Christmas

12DaysCookies_badge-1As we are counting down the days until Christmas and baking/dining to our hearts' content, we wanted to remind ourselves that many children are not so fortunate and unfortunately go to bed hungry at night.

So we wondered what we could do to help.  The easiest way was to click the icon on the left and donate to Share Our Strength.  For as little as $25, we can ensure a child eats 3 complete meals every day for at least a month.  As an added bonus, all donors are also eligible to win various prizes from a Cuisinart mixer to a set of Wusthof knives.

We also wanted to promote the cause as much as we can, so we have joined In Jennie's Kitchen's virtual cookie swap initiative.  Check out her site for tons of wonderful recipes perfect for this holiday season.

For our contribution, we made Lemon Sugar Cookies that can easily be decorated any way you desire.

We used the lemon extract that we made before and added it to our dough instead of vanilla extract.

Below is the Lemon Sugar Cookie recipe we used based on the sugar cookie recipe from AllRecipes.com.

Ingredients
1 1/2 cups butter, softened
2 cups white sugar
4 eggs
1 Tbsp lemon extract
5 cups all-purpose flour
2 tsp baking powder
1 tsp salt


Directions
1. In a large bowl, cream together butter and sugar until smooth. Beat in eggs and lemon extract. Stir in the flour, baking powder, and salt. Cover, and chill dough overnight.

2. Preheat oven to 400F (200C). Line your baking sheets with parchment paper.  Roll out dough on the lined baking sheets 1/4 to 1/2 inch thick. Cut into shapes with any cookie cutter (approx 1 inch apart). Remove excess dough.

3. Bake 6 to 8 minutes in preheated oven. Cool completely.

4. Decorate as desired.

{Easy Recipes} Chocolate Chunk with Nuts cookies and Oatmeal Yogurt Raisin cookies

For my very first cookie swap party, I was so indecisive on what to bring.  Not only was this party my first cookie swap, but I would be sharing my baked goods with professional bakers, cookbook writers, culinary school graduates, and other baking enthusiasts.  Suffice it to say, I was pretty nervous.

I ended up making 3 different cookies: decorated sugar cookies, classic chocolate chunk cookies (with toasted pecans and walnuts), and healthier oatmeal raisin cookies that are made with yogurt and without eggs or nuts (just in case some attendees had nut or egg allergies).  All of the cookies were well-received (phew!) and as a bonus, my husband, his co-workers, and a few friends were treated to the extra cookies I made.

Chocolate Chunk and Nut Cookies (makes 36 cookies)
Ingredients:
2 cups whole wheat flour
1 tsp salt
1 tsp baking soda
1 cup brown sugar (I used dark brown sugar because I like the deeper molasses flavor but any brown sugar will do)
1/2 cup granulated sugar
1 cup softened butter
1 tsp vanilla extract
2 eggs, room temperature
1 pkg semi-sweet chocolate chunks
1/2 cup toasted walnuts, chopped into chunks
1/2 cup toasted pecans, chopped into chunks
Pink Himalyan Salt (can be substituted with sea salt)

Directions:
1. Preheat oven to 375F
2. Line cookie sheet with parchment paper or Silpat mat
3. Combine dry ingredients (flour, salt, baking soda)
4. In a separate bowl, combine both sugars, butter, and vanilla.
5. Add eggs to sugar mixture and beat.
6. Add in dry ingredients from the other bowl and mix well.
7. Stir in chocolate chunks and nuts.
8. Use a small ice cream scoop or spoon and drop small balls of dough onto the lined cookie sheet.
9. Bake for 8-10 minutes
10. Remove from oven, sprinkle with a little bit of Pink Himalayan salt (I like adding a bit of salt to enhance the cookie's sweetness and this pretty pink salt was perfect for it. I bought a container of this salt at Trader Joe's for $1.99)  Transfer to a wire rack to cool.
Oatmeal Raisin Yogurt Chocolate Chip Cookies (makes 24, adapted from Happy Tummy)
Ingredients:
3/4 cup whole wheat flour
1/4 cup unbleached white flour
1 tsp baking powder
1/2 tsp ground cinnamon
3/4 cup dark brown sugar, packed
2/3 cup rolled oats
1/2 cup raisins
1/2 cup semi-sweet chocolate chips
1 cup plain low-fat yogurt
2 Tbsp canola oil

Directions:
1. Preheat oven to 375F.
2. Line cookie sheet with parchment paper or Silpat mat.

3. In a large bowl, sift the flours together with the baking powder and cinnamon. Whisk in the sugar and oats, then stir in the raisins and chocolate chips. 
4. In a separate bowl, beat the yogurt with the oil. Then add yogurt mixture to flour mixture to make a dough.
5. Roll into small balls and place on the prepared baking sheets. Bake for 10-15 minutes, or until browned. 
6. Transfer to a wire rack to cool.

Candied Apples - 11 Days 'Til Christmas!


 With only 11 more days 'til Christmas, we're in the sweet treats mood and thinking about easy, inexpensive, delicious edible gifts!   We decided to make some candied apples using candy melts, apples, and various nuts and candies.  They only took a few minutes to make, and after chilling them overnight to set, were ready to be wrapped up the next day.


Easy Candied Apples

Ingredients:
candy melts (one package was enough to cover 3-4 apples)
apples
wooden sticks (we bought wood dahls and cut them in half)
assorted candies and chopped nuts
 
Directions:
1. Melt the candy according to package directions.
2. Insert the sticks into the apples.
3. Dip the apples into the melted candy.
4. Immediately cover the apples with crushed nuts or assorted candies.
5. Place the decorated apples on a parchment paper/wax paper lined baking sheet.
6. Chill in the refrigerator overnight.

The end result is a festive candied apple that can be wrapped up with cellophane and ribbon. 

Because the candy melts come in a variety of colors, we can imagine all sorts of creative versions.  In addition to nuts, colored sugar crystals, cinnamon, and sprinkles could also be used.

We had some leftover melted candies and covered whole walnuts with them, with a sprinkle of chopped nuts on top.

{Sweet Treats} NYC Cookiefest

One of the holiday traditions I enjoy is baking cookies for friends and family.  Ever since I was a little girl, I would cut and decorate sugar cookies with my parents (while my little brother enjoyed the sweet results!)  Even though I bake every year, I have never attended a Cookie Swap - a party where guests bring a lot of cookies and you go home with an assortment of home-baked goodness.  So when I heard about #cookiefest10, I knew it would be the perfect event to introduce myself to a cookie swap.

The event was started by Chris along with Maggy, Gail, and Abby for food bloggers (and the people who love them).  They did an incredible job finding the venue, making name tags and labels, and getting a great group of bakers in one spot.  Enjoy the photos and make sure to check the links of the talented cookie makers below!



Jessica's Black and White Kisses were the hit of the party (so airy and pretty!)  I brought Chocolate Chunk with Pecans and Walnut cookies, Oatmeal Yogurt Raisin Chocolate Chip Cookies, and a few of sugar cookies for decor.  Other popular pretty cookies were Ken's Salted Praline Batons and Caramel cookies as well as Jackie's Chocolate-dipped cookies shaped like candy canes.

{Food Events} Holiday Entertaining with Celebrity Event Planner Bronson van Wyck

He has planned parties for the Clintons, Diddy, and Chanel.  So when I was invited to celebrity party planner Bronson van Wyck's NYC apartment for a holiday event, I was eager to dine like a star!  In addition to the food and holiday party tips, I was even more excited to see a NYC kitchen that's been featured in Elle Decor magazine!

Bronson's kitchen is what I aspire my future kitchen to be! My favorite appliance had to be the Electrolux refrigerator with a custom blackboard door.  

His living room (that will also be featured in an upcoming magazine) had these sleek mirrored console tables with single blooms in bud vases everywhere (a great easy decorating tip!).  They looked great with the myriad of candles that were lit up (using tons of candles instead of overhead light is another one of Bronson's tips)

From fois gras on pain perdue to caramelized golden beets, the passed hors d'oeurves were cute and tasty.  Bronson's Sugar and Spice nuts and Marcus Samuelson's Gravlax (Bronson was lucky enough to be taught by this Top Chef Master) were also big hits and easy to prepare snacks before guests arrive.  (For recipes, see below)

For the main course, Bronson prepared a plate of garlicky mashed potatoes, a robust beet salad, cheese bread, and rack of lamb.  The lamb was the star of the dinner, and with a smaller rack of lamb, could be passed as a two-bite hors d’oeuvre.  The lamb was flavorful and juicy and seemed really easy to make at home

 I had a wonderful evening with a charming host.  At the end of the night, we were gifted with a few decorative items and, my personal favorite, a bottle of Bronson's Champagne Vinaigrette.  Bronson had bottled his salad dressing recipe to give to friends and family this holiday. I always love getting ideas on edible gifts that I can make at home and give out to loved ones.  For more of Bronson's tips and recipes, please see below.
 
My favorite Bronson van Wyck holiday entertaining tips:
  • Stray from tradition. Magnolia leaves are a nice alternative to pine...and less likely to catch fire. 
  •  If you’re planning a seated dinner, seat it! Place cards give every guest a home and ensure good conversation between new and old friends. For a twist, have a second seating plan and ask your guests to switch seats after the first course.
  • Home-style accents add a personal touch to any party. When winter arrives, I love to serve something seasonal like my great-grandmother’s eggnog recipe – it has enough bourbon in it to thaw any frost!
Recipes:

Cheese Bread with Gruyere, Cheddar and Scallions 
Ingredients:
1 ¾ cups all-purpose flour
1 tablespoon baking powder
1 teaspoon salt
¼ teaspoon white pepper
pinch of cayenne pepper
3 large eggs, at room temperature
1/3 cup whole milk, at room temperature
1/3 cup extra virgin olive oil
1 generous cup of grated gruyere
2.5 ounces white cheddar, cut into very small cubes
¾ cup thinly sliced scallions

Directions
Preheat oven to 350 degrees F. Butter loaf pan.

Whisk flour, baking powder, salt and white pepper together in a large bowl.

In a separate bowl add eggs and whisk for one minute. Whisk in milk and olive oil.

Combine wet ingredients to the dry ingredients using a sturdy wooden spoon or rubber spatula. Do not overwork the dough – beating the dough too much will toughen the consistency of the bread.

Stir in cheeses and scallions. Turn the dough into the buttered loaf pan. Pat the top of the dough with the back of the spatula or spoon in the pan to even it out.

Bake for 35 – 45 minutes, or until the bread has become golden. Once baked, transfer the pan to a cooling rack, and let cool for five minutes or so. Run a knife along the edges to loosen the bread from the pan. Turn the loaf over to release it on to the rack. Invert and cool right side up.

Sugar and Spice Nuts
Ingredients
½ cup sugar
1 ½ teaspoon salt
2 teaspoons chili powder
¾ teaspoon ground cinnamon
1 teaspoon cayenne
1 large egg white
2 cups nuts (raw mixed nuts – or whole raw almonds, cashews or pecans)

Directions
Preheat oven to 300 degrees F. Spray nonstick baking sheet with cooking spray.

Mix all dry ingredients in a small bowl. In a medium sized bowl, beat the egg white lightly until runny (1-2 minutes). Toss in the nuts and evenly coat with the egg. Pour in the dry ingredient mixture to the egg-coated nuts. Using your hands, evenly coat the nuts with the sugar/spice mixture. Transfer the nuts to the baking sheet.

Bake for 30-35 minutes, or until the nuts are browned. Let cool for five minutes. Transfer cooled nuts to cutting board and break apart as necessary.

Gravlax 
Ingredients
 ¾ cup white sugar
1 tablespoon brown sugar
½ cup salt
2 tablespoons cracked white peppercorns
2 ½ - 3 pounds skin-on salmon
2-3 large bunches of fresh dill, coarsely chopped (including stems)

Directions
Combine sugar, salt and peppercorns in small bowl and mix well. Place salmon, skin side down, in a shallow dish and rub salt mixture onto both sides of the salmon. Sprinkle salmon with remaining mixture and cover with chopped dill. Cover and let stand for several hours (up to 8) in a cool spot. Then transfer to the icebox for 36 hours.

About four hours before serving, remove the skin from the prepared gravlax for Salmon Skin Chips below.

Garnish with fresh whole dill and chives and serve with thin slices of toasted whole-grain or black bread.

Beet and Blood-Orange Salad with Mint 
Ingredients
2 pounds mix of red and golden beets (about 10 medium beets), peeled and cut into ¾ inch pieces
8 blood oranges
¼ cup flat-leaf parsley coarsely chopped
¼ cup mint coarsely chopped
5 ounces goat cheese, crumbled

Directions
Spread the beets in large steamer basket and steam until tender, about 15 minutes. Transfer beets to bowl and let cool.

Peel oranges with knife, removing all white pith. Quarter the oranges lengthwise, then slice crosswise. Add oranges to beets along with parsley and mint.

If you have a mid-winter craving for greens, serve over 2-3 heads of Boston lettuce. Simply wash the lettuce and pat dry, then gently toss with the beet mixture.

Rack of Lamb Gordon

Ingredients
½ cup olive oil
¼ cup unsalted butter at room temperature
4 racks of lamb (1 ½ pounds each, 7 to 8 chops per rack)
Salt to taste
1 cup fine bread crumbs
1 tablespoon chopped fresh thyme leaves
1 tablespoon chopped fresh oregano leaves
8 garlic cloves, minced
Freshly ground pepper to taste
1 cup Dijon mustard

Directions
Preheat oven to 500 degrees F.

In roasting pan combine oil and butter and place over high heat. Add the lamb racks and sear on all sides until brown, 3 to 4 minutes. Remove from heat and season with salt.

Place the pan in the oven and roast the lamb on the center rack for 15 minutes. Remove from the oven and allow to rest for 10 minutes.

In medium bowl, combine the bread crumbs, thyme, oregano and garlic. Season with salt and pepper and mix.

Generously smother the lamb racks with mustard, coating all sides. Coat the lamb with the bread crumb mixture and return to oven for 5 minutes. Remove from oven and carve racks into individual chops.

Basic Mashed Potatoes #2
Ingredients
6 lbs. Yukon Gold potatoes, whole with skin on
Salt
White pepper
1 ½ cup whole milk
1 ½ cup heavy cream
¾ lb. salted butter
2 tablespoons extra virgin olive oil
4 large cloves of garlic, minced
Minced parsley and chives for garnish

Directions
Simmer the unskinned potatoes in salt water over medium heat until they are tender all the way through when pierced by a knife, about an hour. Do not allow to reach a violent boil, as this will cause the skin to break apart and the potatoes will absorb too much of the water.

Heat the olive oil and minced garlic in a small sauce pan, and cook on medium-low heat for 10-12 minutes. You want the garlic to slowly cook through without browning.

Meanwhile, when the potatoes are almost done, mix the milk and cream together and heat until hot but not boiling.

Drain the water from the potatoes, and add ¼ of the warm milk and cream mixture. Use a potato masher to begin the mashing.

Add half the butter and continue mashing. Slowly pour in half the remaining milk and cream, and then the cooked garlic and olive oil and half of the remaining butter. The remaining milk and cream and butter can be added for flavor and consistency to your taste.

Salt and pepper to taste, garnish and serve.

If you are not serving immediately, you will want to be sure to save a little of the warm milk and cream mixture as well as butter to add right before serving.

Triple Chocolate Chip Cookies
Ingredients (makes 3 dozen)

1 cup (2 sticks) unsalted butter, at room temperature and cut into chunks
2/3 cup granulated sugar
1 ¼ cup dark brown sugar, lightly packed
3 tablespoons light corn syrup
2 large eggs
1 teaspoon vanilla extract
3 ½ cups all-purpose flour
1 teaspoon baking soda
1 teaspoon salt
5 ounces dark chocolate
5 ounces white chocolate
4 ounces milk chocolate

Directions
Combine butter, sugars and corn syrup in bowl with electric mixer. Beat in eggs, 1 at a time. Stir in vanilla.

In separate bowl, combine flour, baking soda and salt. Add dry ingredients to the creamy mixture. Do not overbeat.

Fold in chopped chocolate.

Preheat oven to 375 degrees F. Roll out dough into 2 inch balls and place on cookie sheet. Bake until the cookies are set on the edges and gooey on the center (about 8 minutes). Let cool for 5 minutes.

Easy Puff Pastry "Baklava"


 While flipping through this month's Cooking Light, we found this decadent recipe for Chocolate Baklava.  It looked really good, but we did not have the budget for the ingredients, nor the patience to use phyllo dough (They're delicate, dry out quickly, and require multiple layers - and we were craving a quick sweet treat)

So we were fortunate to be a part of the Foodbuzz Tastemakers program because this month, we received a complimentary package of Pepperidge Farms puff pastry sheets.  We decided to improvise on the recipe and use puff pastry sheets instead of phyllo dough and use more inexpensive nuts (rather than the pricier hazelnuts and macadamia nuts).  The result was an easy-to-make, fragrant and rich "baklava" that still tasted really good the following day. 

 
 Easy Puff Pastry "Baklava"
Ingredients (makes approximately 16 servings):
1/4 cup honey
1/4 cup water

1-2 cinnamon sticks  
1 cup hazelnut spread
 1/2 cup almonds, coarsely chopped
1/2 cup walnuts, coarsely chopped
1/2 tsp ground cinnamon
1/8 tsp salt

room-temperature unsalted butter (to grease the pan and dough)
1 puff pastry sheet, thawed 
 
 Directions:
 1. Preheat oven to 400F
2. Combine honey, water, and cinnamon sticks in a pot on low.  Stir to dissolve honey.  Bring heat up to medium, allowing sauce to boil.  Cook for about 5 minutes then set aside. 
 
 3. Unfold pastry sheet and cut along the fold to make three strips.  Cut these strips into quarters.  In total, you will have 12 squares.  Place on a greased baking sheet.
4. Put hazelnut spread in a microwave safe bowl and heat for 30 seconds.
5.  Add mixed nuts together in a bowl along with the ground cinnamon and salt.
 
 6.  Now for the layers!  Lightly grease each sheet with butter.  Add a layer of hazelnut spread (approximately 1 generous tablespoon), then cover generously with the chopped nuts mixture. 
 
 7. Add another puff pastry square, and then another layer of hazelnut and nuts.  Finally top with the final puff pastry layer.  This will make 4 "baklava towers".
8.  Bake in the oven for 15-20 mins.
 
 9.  Drizzle the honey syrup on top, cut into quarters, and serve. 
 
10.  If you have leftover crushed nuts mixture, you can layer them on top for extra crunch.

These Puff Pastry "Baklava" tasted as good as they look and were really easy to make.  The most amount of time was spent chopping the nuts and because they still tasted good the next day, can be made ahead of time for your next holiday party.
