Chocolate Almond Cherry Pie

It's cherry picking season and we took full advantage of the nice weather to head up to Prospect Hill Orchards in Milton, NY (roughly 2 hours north of NYC).

With a couple pounds of sweet fresh cherries on hand, we decided to make a sweet and crunchy dessert.

Ingredients:
1 1/4 cup brown sugar
1/4 cup water
2 tbsp flour
3 eggs, beaten
1 1/2 cup chopped almonds
1 cup bittersweet chocolate chips
2 tbsp butter, melted
1/4 tsp salt
1 frozen pie crust
fresh cherries, pitted (enough to filled the pie crust)

Directions:
Preheat oven to 325 F
Fill the bottom of the pie crust with chocolate chips. Add the cherries on top.
In a large bowl, dissolve sugar with the water. Add the flour, eggs, almonds, butter, and salt. Stir well. Pour the mixture on top of the cherries.

Bake for 1 hour or until filling is solidified.

Cool the pie (We've chilled the pie in the fridge for a couple of hours before serving).


Ta-Da! The finished product is ready to be served with cherries on the side.
