Apple Crumble Pie


After apple-picking in the Hudson Valley, we had the enviable task of figuring out what to do with all of our apples.  We made a significant dent just eating them fresh, but decided to treat ourselves make some warm apple pies.

 
We adapted our recipe from this Apple Crumble Pie recipe (allrecipes.com)

Ingredients (for 1 pie, though we made 2 - yes, there are only 2 of us!)
1 (9 inch) deep dish pie crust
Filling:
5 cups apples - chopped (for faster cooking, cut into very thin slices)
2 Tbsp flour (to coat apples)
1/4 cup white sugar
1/4 cup brown sugar
3/4 tsp ground cinnamon
Crumble:
1/2 cup white sugar
1/2 cup brown sugar
2/3 cup all-purpose flour
1 stick butter

Directions
1. Preheat oven to 350F.
2. Coat apples with flour, sugar, and cinnamon mixture.
3. Fill crust with coated apples.
4. Make crumble mixture.
5. Cover apples with crumble mixture.
6. Bake pie in oven for an hour, or until apples are soft and top is lightly browned.

Slice pie and serve..

We had our slice a la mode with Creme Brulee ice cream from Shake Shack.

We love crumble - and what's better than warm apple pie with melted ice cream?  Good thing we made a pie for each of us!
