Homemade Lemon, Strawberry, and Mint Popsicles

With strawberry prices dropping , we have been enjoying plenty of the red berries in our salads and desserts.  In anticipation of warmer weather (and eager to test out these popsicle molds I bought at Zabar's), I decided to use these berries (and other fresh ingredients) to make homemade popsicles.

Popsicle Ingredients
Homemade Fruit Popsicles (makes 6)
Ingredients:
1 1/2 cup hot water
1 package lychee-flavored gelatin
Juice from 2 squeezed lemons
1 Tbsp agave syrup
1 cup sliced strawberries
6 sprigs mint
Lemon zest to taste (optional)
Popsicle directions
Directions:
1. Add hot water to gelatin powder.  You can substitute the lychee-flavored gelatin for any other flavors of Jello.  I used the gelatin as both a sweetener and to give the popsicles that crunchy texture.
2. Add the juice from two squeezed lemons.
3. Add agave syrup to further sweeten the mix.

4. Put mint sprigs in mold.

5. Put strawberries and lemon zest in mold.  We both like tart flavors so I added the lemon zest for extra tartness and color, but it can be omitted.

6. Add liquid to the mold.
7. Freeze overnight.

It's so simple, pretty, and puts us in a summery mood.  We loved the lemonade flavor and fresh ingredients.  And knowing it's healthier than store-bought ones makes us feel a tad less guilty indulging in these frozen treats.
